MAKING CHEESE

Our cheeses are made by hand from start to finish.

Although we don't have our own cows we have a fantastic relationship with the local farm Our Cow Molly which is 4 miles away ensuring our milk is always super fresh.  If you want to meet "Molly", or her sister, you can visit the farm Thursday - Sunday and also try their amazing ice cream which funnily enough we also sell!

 

During the cheesemaking process we handle the curds very gently allowing the cheese to form and develop.  Each cheese is hand salted and turned daily to ensure it matures consistently.

Little Mester

We currently make a surface ripened soft cheese called Little Mester.

Little Mester is a young, fresh cheese but packed with flavour.It is gooey around the edges with a creamy core.  

Yorkshire Poutine Cheese Curds

These freshly made curds are similar to a fresh mozzarella and idea for making the Canadian dish of Poutine (French fries topped with cheese curds and gravy) or can be used as a pizza topping, in burritos or just out of the deli pot.
